C'est La Vie

MY STORY

My name is Vincent and this is my story. I was born in the south of France, Avignon near the Mediterranean - where in summer cicadas sing, lavender fields scent the countryside and the gastronomic culture is very rich.

I come from a region of France called Provence where, the Mediterranean climate allows us to enjoy fresh fish, quality meat, fruit, and vegetables found all year round, in small Provencal markets while talking to local producers.

Becoming a chef was never my intention. I studied horserace as a Jockey, from age 14-18. I was also raised in the music industry, and by natural habit and interest, became a DJ during my teenage years.

But then, I met a man in 2018 named Ludovic Gallic, who showed me the art of cooking. Since my time with him, I set for adventure here in The USA to share my new found passion, and purpose in Georgia.

Georgia offered me a nostalgic feeling of the climate in France, So I knew this would be the place I call home. I opened my first restaurant in Washington GA. I fell in love with the sense of community there. But an unfortunate tragedy struck all sense of community, COVID.

Then in 2022, a wonderful opportunity showed up in Big Canoe, Marble Hill. I had an idea to develop the business with one side of the restaurant dedicated to the casual bar scene, and the other side fine dining. This is where Clark came along and has been with me ever since.

After some time, Canton GA presented another opportunity. My true desire was exclusively a fine dinning establishment. To welcome patrons as if you are entering into my home. A true mix of comfort, delicacy, and refinement. To have a taste of the European lifestyle, where time ceases and living in the moment becomes bliss, hence the name C'est La Vie. An expression of humble truth. Since my time in Canton, serving this community has been my greatest pleasure, and I look forward to sharing my cuisine with you, for years to come.
